 Here’s a recipe for a healthy and delicious meal: Quinoa Salad with Roasted Vegetables and Lemon Vinaigrette.

Ingredients:

For the Salad:

    1 cup quinoa (uncooked)

    2 cups water or vegetable broth (for cooking quinoa)

    1 red bell pepper, diced

    1 zucchini, diced

    1 cup cherry tomatoes, halved

    1/2 cup red onion, finely chopped

    1 cup baby spinach or kale

    1/4 cup feta cheese (optional)

    1/4 cup chopped fresh herbs (like parsley or basil)

For the Lemon Vinaigrette:

    3 tbsp olive oil

    2 tbsp fresh lemon juice

    1 tbsp Dijon mustard

    1 tsp honey or maple syrup

    Salt and pepper to taste

Instructions:

    Cook the Quinoa:

        Rinse the quinoa under cold water. In a medium pot, bring the water or vegetable broth to a boil.

        Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Let it cool.

    Roast the Vegetables:

        Preheat your oven to 400°F (200°C).

        Toss the red bell pepper, zucchini, and cherry tomatoes with a bit of olive oil, salt, and pepper. Spread them on a baking sheet.

        Roast for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.

    Prepare the Lemon Vinaigrette:

        In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper.

    Assemble the Salad:

        In a large bowl, combine the cooked quinoa, roasted vegetables, red onion, baby spinach (or kale), and fresh herbs.

        Drizzle with the lemon vinaigrette and toss to combine.

        If desired, sprinkle with feta cheese.

    Serve:

        Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.

This salad is nutrient-dense, with a good balance of protein from quinoa, vitamins from vegetables, and healthy fats from olive oil. Plus, it's customizable based on your preferences and seasonal produce!
